Sabatier (with hand) Rue St Honore flexible fillet knife hand forged after drop forged carbon steel blade with brazed nickel sheet ferrule (before solid aluminum tube was used post war) and ebony handle. 

In the early 1800s this maker was very successful bringing knives forged in Thiers to their Paris workshop to be ground and handled. This was started as a literal marriage between a Thiers knife-making family son and the daughter of a Paris surgical tool maker. At that time no economically made knives were made in Paris, there were tools and knives made in Paris but little for working cooks. Thiers was great at making knives for professional cooks but was separated from the heart of the restaurant world; Paris. 

Eventually in the 20th century all knives were made in Thiers it seems but this brand was key in retailing in Paris and exporting to cooks abroad.
