Astral Works 52100 150mm Gyuto Carbon Steel Brass & Antique Rosewood

Hand made in Oakland California by blacksmith Elias Sideris in 52100 carbon steel with a milled brass ferrule, and antique Honduran rosewood wood handle. The blade is ground with a convex face thin behind the edge and is oil quenched and hardened to approximately 61 HRC giving them an excellent blend of edge formation, toughness and easy sharpening.

Handle has a 'rat tail' grooved (named after the rat tail file traditionally used to shape bolsters in a similar fashion) brass ferrule 1/2 bolster with a brass pinned antique Hondural rosewood handle. 

Elias began knife making in 2011 and worked for many years in Greenfield Massachusetts which has a very rich history of American knife and tool making before moving out to Oakland California.
