The Roquefort knife pattern owes its origins to shepherds' knives used in the Aveyron region, famous also for Roquefort cheese made in the Combalou caves of Roquefort-sur-Soulzon.
Established in 1870 and still a family run business, Au Sabot makes knives in traditional and original patterns in Thiers, France. They utilize a wide range of new and old equipment and Thiers skilled-handwork is the keystone of their production.
