We are proud to offer Koshi Ibuki rice made for us in Niigata prefecture, the prefecture in Japan most widely associated with having excellent rice. Niigata has been the center of rice making in Japan for centuries due to its fertile soils, large temperature gaps in the day, and quality of its water that comes from melting mountain caps. As there is a long history of rice making in Niigata, there is also an abundance of knowledge and wisdom in its farmers. 

Almost completely unavailable outside of Niigata, Koshi Ibuki is widely considered to be equally delicious as Koshihikari (the "royalty" of rice in Japan) in flavor, aroma and shininess. It is also lighter (assari) than Koshihikari making it perfect for sushi. Each grain is well defined and because it is not very sticky, it is easy to pair with any food. Also great for lunch boxes and rice balls (onigiri) as it remains delicious and does not harden even after it has cooled. Also good for fried rice and ochazuke.
